The two owners, Bobby Pollette and Jeff Acol are both born and raised in Kailua Kona Hawaii. They met at the Four Seasons when Bobby was just 16. Not knowing much about food, other than he wanted to become a chef, Jeff took him under his wing and a friendship was born.
Jeff opened his restaurant in Naples, Florida called “A Table Apart.” It quickly became one of the top restaurants in Florida. Bobby bounced between Aspen and Palm Beach with his catering company, specializing in high-end entertainment and parties. Catering is still taking place in Dallas and Au Troisieme is their latest venture together.
